Creamy Vegan Pasta
A decadent and creamy vegan pasta dish made with cashews and nutritional yeast.

Ingredients
- Pasta: 8 oz
- Raw Cashews: 1 cup, soaked
- Nutritional Yeast: 1/4 cup
- Lemon Juice: 2 tbsp
- Garlic: 1 clove
- Spinach: 2 cups
Instructions
- Cook pasta according to package directions.
- While pasta cooks, drain cashews and add to a blender with nutritional yeast, lemon juice, garlic, and 1/2 cup of water. Blend until smooth.
- Drain pasta, reserving 1/2 cup of pasta water.
- Return pasta to the pot, add the cashew sauce and spinach. Cook until spinach is wilted, adding pasta water as needed to thin the sauce.
- Season with salt and pepper to taste.
