Creamy Vegan Pasta

A decadent and creamy vegan pasta dish made with cashews and nutritional yeast.

Ingredients

  • Pasta: 8 oz
  • Raw Cashews: 1 cup, soaked
  • Nutritional Yeast: 1/4 cup
  • Lemon Juice: 2 tbsp
  • Garlic: 1 clove
  • Spinach: 2 cups

Instructions

  1. Cook pasta according to package directions.
  2. While pasta cooks, drain cashews and add to a blender with nutritional yeast, lemon juice, garlic, and 1/2 cup of water. Blend until smooth.
  3. Drain pasta, reserving 1/2 cup of pasta water.
  4. Return pasta to the pot, add the cashew sauce and spinach. Cook until spinach is wilted, adding pasta water as needed to thin the sauce.
  5. Season with salt and pepper to taste.
