Healthy Quinoa Salad

Ingredients

  • Quinoa: 1 cup, uncooked
  • Cucumber: 1, diced
  • Cherry Tomatoes: 1 cup, halved
  • Red Onion: 1/4, finely chopped
  • Feta Cheese: 1/2 cup, crumbled
  • Lemon Juice: 1/4 cup
  • Olive Oil: 2 tbsp

Instructions

  1. Cook quinoa according to package directions. Let cool.
  2. In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, and feta cheese.
  3. In a small bowl, whisk together lemon juice and olive oil. Pour over the salad.
  4. Toss to combine and serve immediately or chilled.
