Ingredients
- Quinoa: 1 cup, uncooked
- Cucumber: 1, diced
- Cherry Tomatoes: 1 cup, halved
- Red Onion: 1/4, finely chopped
- Feta Cheese: 1/2 cup, crumbled
- Lemon Juice: 1/4 cup
- Olive Oil: 2 tbsp
Instructions
- Cook quinoa according to package directions. Let cool.
- In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, and feta cheese.
- In a small bowl, whisk together lemon juice and olive oil. Pour over the salad.
- Toss to combine and serve immediately or chilled.
