Ingredients
- Cod Fillets: 4 (6 oz each)
- Cherry Tomatoes: 1 pint, halved
- Kalamata Olives: 1/2 cup, pitted
- Capers: 2 tbsp
- Garlic: 2 cloves, sliced
- Olive Oil: 2 tbsp
- Fresh Parsley: for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Place cod fillets in a single layer in a baking dish.
- In a bowl, toss together tomatoes, olives, capers, and garlic with olive oil, salt, and pepper.
- Spoon the tomato mixture over and around the fish.
- Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
- Garnish with fresh parsley before serving.
