Ingredients

  • Cod Fillets: 4 (6 oz each)
  • Cherry Tomatoes: 1 pint, halved
  • Kalamata Olives: 1/2 cup, pitted
  • Capers: 2 tbsp
  • Garlic: 2 cloves, sliced
  • Olive Oil: 2 tbsp
  • Fresh Parsley: for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place cod fillets in a single layer in a baking dish.
  3. In a bowl, toss together tomatoes, olives, capers, and garlic with olive oil, salt, and pepper.
  4. Spoon the tomato mixture over and around the fish.
  5. Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Garnish with fresh parsley before serving.
