Ingredients
- Salmon Fillet: 6 oz
- Mixed Greens: 4 cups
- Avocado: 1/2, sliced
- Cucumber: 1/2, sliced
- Lime Juice: 2 tbsp
- Olive Oil: 1 tbsp
- Cilantro: 2 tbsp, chopped
Instructions
- Season salmon with salt and pepper. Grill or pan-sear for 4-5 minutes per side, or until cooked through.
- In a large bowl, combine mixed greens, cucumber, and cilantro.
- Flake the cooked salmon and add it to the salad. Add sliced avocado.
- Whisk together lime juice and olive oil for the dressing. Drizzle over the salad.
- Gently toss and serve immediately.
