Ingredients

  • Salmon Fillet: 6 oz
  • Mixed Greens: 4 cups
  • Avocado: 1/2, sliced
  • Cucumber: 1/2, sliced
  • Lime Juice: 2 tbsp
  • Olive Oil: 1 tbsp
  • Cilantro: 2 tbsp, chopped

Instructions

  1. Season salmon with salt and pepper. Grill or pan-sear for 4-5 minutes per side, or until cooked through.
  2. In a large bowl, combine mixed greens, cucumber, and cilantro.
  3. Flake the cooked salmon and add it to the salad. Add sliced avocado.
  4. Whisk together lime juice and olive oil for the dressing. Drizzle over the salad.
  5. Gently toss and serve immediately.
