Spicy Chicken Curry

- Chicken Breast: 2, cubed
- Onion: 1, chopped
- Garlic: 3 cloves, minced
- Ginger: 1 inch, grated
- Coconut Milk: 1 can (13.5 oz)
- Diced Tomatoes: 1 can (14.5 oz)
- Curry Powder: 2 tbsp
Instructions
- In a large skillet, heat oil over medium-high heat. Add chicken and cook until browned. Remove from skillet.
- Add onion to the skillet and cook until softened. Stir in garlic and ginger.
- Stir in curry powder, then add coconut milk and diced tomatoes.
- Return chicken to the skillet. Bring to a simmer and cook for 15-20 minutes, or until chicken is cooked through.
- Serve with rice or naan bread.
