  • Chicken Breast: 2, cubed
  • Onion: 1, chopped
  • Garlic: 3 cloves, minced
  • Ginger: 1 inch, grated
  • Coconut Milk: 1 can (13.5 oz)
  • Diced Tomatoes: 1 can (14.5 oz)
  • Curry Powder: 2 tbsp

Instructions

  1. In a large skillet, heat oil over medium-high heat. Add chicken and cook until browned. Remove from skillet.
  2. Add onion to the skillet and cook until softened. Stir in garlic and ginger.
  3. Stir in curry powder, then add coconut milk and diced tomatoes.
  4. Return chicken to the skillet. Bring to a simmer and cook for 15-20 minutes, or until chicken is cooked through.
  5. Serve with rice or naan bread.
