Stuffed Bell Peppers

Ingredients

  • Bell Peppers: 4, any color
  • Ground Turkey: 1 lb
  • Cooked Rice: 1 cup
  • Diced Tomatoes: 1 (14.5 oz) can, drained
  • Onion: 1/2, chopped
  • Italian Seasoning: 1 tsp
  • Shredded Mozzarella: 1/2 cup

Instructions

  1. Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. In a skillet, cook ground turkey and onion until the turkey is browned. Drain fat.
  3. Stir in cooked rice, diced tomatoes, and Italian seasoning. Season with salt and pepper.
  4. Spoon the mixture into the hollowed-out bell peppers.
  5. Place the peppers in a baking dish, add about 1/2 inch of water to the bottom of the dish.
  6. Bake for 30-35 minutes, or until peppers are tender. Top with mozzarella cheese during the last 5 minutes of baking.
