Stuffed Bell Peppers

Ingredients
- Bell Peppers: 4, any color
- Ground Turkey: 1 lb
- Cooked Rice: 1 cup
- Diced Tomatoes: 1 (14.5 oz) can, drained
- Onion: 1/2, chopped
- Italian Seasoning: 1 tsp
- Shredded Mozzarella: 1/2 cup
Instructions
- Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook ground turkey and onion until the turkey is browned. Drain fat.
- Stir in cooked rice, diced tomatoes, and Italian seasoning. Season with salt and pepper.
- Spoon the mixture into the hollowed-out bell peppers.
- Place the peppers in a baking dish, add about 1/2 inch of water to the bottom of the dish.
- Bake for 30-35 minutes, or until peppers are tender. Top with mozzarella cheese during the last 5 minutes of baking.
